Hi all! I know it's been a while since you've seen me around these parts, but I tried out a new recipe over the weekend and wanted to share it with you! I was inspired by one of the posts I curated for Rue Now on ways to cook and bake with Girl Scout cookies, so I whipped up two different variations of vanilla cupcakes with peanut butter frosting and Girl Scout cookies baked in. :) They're quick and easy to make and are a total crowd-pleaser, so I highly recommend trying them when you're able to get your hands on some Tagalongs and Peanut Butter Sandwich cookies!

Feature: Without a Measuring Cup
I hope you're all having a fantastic summer so far! As most of you know, I love to bake, but I absolutely hate cooking. Maybe it's because I live alone and I don't see the point of cooking for one, or maybe it's because I always get hungry halfway through and start eating the ingredients before the meal is done, but either way, I just can't be bothered to cook for myself. Luckily for me, one of my closest friends and fellow bloggers Vanessa of Without a Measuring Cup moved right down the street from me back in April, and she just so happens to be a personal chef!
As a vegetarian who hates cooking, it's really easy for me to make unhealthy food choices when I'm left to my own devices. I'll start the day off on a decent note with a greek yogurt and a piece of fruit, but then it usually goes downhill from there. Since I never bring my own lunch, I often grab whatever to-go vegetarian options I can find near my office, which are usually a wrap or salad of some kind. A lot of them seem healthy but end up being shockingly high calorie and high fat - check out page 6 of this menu to see what I mean. Then when I got home on weeknights, since I never had groceries in my apartment, I would order takeout that was more often than not unhealthy. I noticed that over the winter and early spring, I gained more weight than I would have liked to and always felt bloated after I ate. I wanted to change my eating habits not only so I could look better, but so I could feel better too, and when I mentioned this all to Vanessa, she came up with a plan for me.

According to Vanessa, I was making three common mistakes when it came to choosing my meals: I wasn't eating enough foods that were fresh and nutritious; I wasn't eating enough protein as a vegetarian but was eating too much dairy; and I wasn't controlling my portions well enough. Vanessa worked with me to come up with my own customized weekly meal plan for breakfasts and lunches, Mondays through Fridays. Since I have zero "chefing" experience and don't do well with complicated meals, we decided to make all of my breakfast and lunch options delicious yet simple enough for me to bring and assemble or re-heat at work. Breakfast is usually some type of smoothie that's packed with protein but also tastes great and/or an egg dish that I can eat at my desk. My lunches vary, but ALL of them include ingredients that I like and work with Vanessa to select, including mini "pizzas," quinoa salads, egg white & veggie scrambles, spiralized cucumber "pasta," and the stuffed pepper you'll see the recipe below.

Recipe: Lemon Chiffon Cupcakes
I hope you all had a great weekend! I baked for a baby shower brunch this past weekend, and in addition making blueberry pancake cupcakes with maple buttercream, I also made a new recipe: lemon chiffon cupcakes filled with lemon curd and topped with a fluffy lemon buttercream! These cupcakes did take a bit of work, but they were SO worth it. The cake was light and fluffy due to the addition of the meringue, the filling was sinfully delicious, and the frosting was not too sweet and the perfect compliment for the rest of the treat. I definitely recommend trying these out for any spring or summer party you bake for since they're so light and refreshing!

Easter Recipe Roundup

Cadbury Creme Egg Brownies. All you need to do is take some mini Cadbury creme eggs and bake them in to chocolate brownies - the results are delicious and perfect for Easter!
Carrot Cake Cupcakes. Take every Easter Bunny's favorite vegetable and make them taste better by throwing them into some cupcakes with the best frosting in the world: cream cheese!
Cadbury Mini Egg Cookies. The absolute best cookies I have ever made, hands down. Who doesn't love mini eggs?!

Recipe: Chocolate Chip Cookies
Happy Thursday! I realized that I've never posted my recipe for chocolate chip cookies before, and since I baked them on Tuesday night, I decided to share the recipe with you all today. There's nothing super special about them, but whenever I bake them I get lots of compliments and people can never eat just one! This time I used bittersweet chips because I was out of semi-sweet which most people prefer, but they were still just as delicious. They're perfectly soft in the middle and a little bit crispy on the outsides. Let me know if you decide to try them out! :)

Recipe: Oreo Cream Cheese Brownies
Oreos and cream cheese are two of my favorite things, so when I came across this recipe, I knew I had to make them for myself! You do need to build in at least 4 hours for the brownies to set, but otherwise they are super easy to make and are sinfully delicious. The photos just don't do them justice!

Recipe: Blueberry Filled Vanilla Cupcakes with Cream Cheese Frosting
When one of my coworkers gave me a jar of blueberry jam as a Christmas gift, my first thought was "I want to fill some cupcakes with this!" So this past weekend, I made some simple vanilla cupcakes, filled them with the blueberry jam and topped them with a cream cheese frosting. They were absolutely delicious and are quick & easy to make, so you should definitely give them a try!

Recipe: Eggnog Streusel Muffins
In addition to making tequila chili chocolate truffles for Christmas, I also baked eggnog streusel muffins! Although they didn't come out as pretty as I had hoped {my streusel topping wasn't crumbly enough}, they tasted absolutely delicious and would make a perfect breakfast treat any time of the year. The streusel crumb topping and eggnog glaze are the best part of these muffins, so don't leave them out if you decide to make them!

Recipe: Tequila Chili Chocolate Truffles
I hope you all had a fantastic Christmas! I wanted to share the recipe for one of the sweet treats I brought with me to Christmas dinner yesterday - tequila chili chocolate truffles! I have only made truffles a couple of times before, so it was a slower process for me than baking, but I had a great time experimenting with this recipe. You could only taste a hint of tequila and chili powder in these, so if you want to be more daring, I suggested adding more of each to the recipe!

Recipe: Pineapple Mini Cheesecakes
This past weekend, I made a delicious summer recipe - pineapple mini cheesecakes! Topped with homemade whipped cream, these little treats are perfect for the summer because they're fresh, cold and light. I found the recipe on Reynolds Kitchens' website - in addition to making their famous tin foil, they make lots of other baking products and have a huge recipe catalog online! Blueberry & Raspberry Muffins
This past Saturday, it poured all day long, so I caught up on some chores around the house and grocery shopping. I bought fresh berries and decided to make some blueberry and raspberry muffins! I don't make muffins very often, but I had a craving for them for some reason, and they did not disappoint! They're quick and easy and the cinnamon sugar crumble on top makes them even more delicious. :)

Carrot Cake Cupcakes
Happy Wednesday! I'm leaving tonight for San Diego to visit my sister and I am so excited to see her! Her 24th birthday is tomorrow and it'll be great to celebrate with her and get some warm weather. I'll be back on Monday, but I have a few posts queued up in my absence. :)

UPDATED: Snickers Cupcakes
I posted this recipe when I first started my blog, but thought I'd repost it with new photos and an updated recipe since I made them again this weekend! This Snickers cupcake recipe is my go-to recipe when someone asks me to bake for a party. This flavor combo seems to be the biggest crowd pleaser and never disappoints! The cupcakes turn out perfectly every time I make them and I know I can always count on this recipe. Plus, the caramel filled center is always a nice surprise to bite into! :)

Miss Boston Princess Party & Funfetti Cupcakes
Last weekend was the big Miss Boston/Cambridge Pageant, and it was a crazy busy one for me! On Saturday, I helped out with the Princess portion where we threw a little party for the younger girls who appeared in Sunday's pageant. There were arts and crafts, mani-pedis and lots of rehearsing for the pageant! I also set up a DIY cupcake bar for the girls with freshly baked homemade funfetti cupcakes, vanilla buttercream, candy and little crowns for toppers and helped them decorate their own cupcakes to bring home. It was such a fun experience and I thought I'd share some of the photos with you! :) Click through for the recipes as well.
