Butterscotch Brownies

How do you guys feel about butterscotch? I personally love the flavor and feel like I don't eat enough of it, so I decided to make these delicious butterscotch brownies during my free time at home on MLK day this past Monday. Although there are three steps to make them, they are all super quick and easy, so don't let them scare you away! The brownies were the perfect combo of chocolate and butterscotch and I loved the chocolate ganache topping. My coworkers enjoyed eating them yesterday after lunch as well! :)




Butterscotch Brownie Bars
makes 24 brownies

For the chocolate batter...
  • 3/4 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 5 oz. bittersweet chocolate
  • 1 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup bittersweet chocolate chips
  1. Preheat oven to 350 degrees and grease a 9X13 pan.
  2. Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
  3. Melt butter and chocolate in a large bowl in the microwave in 30 second intervals. Stir between each interval until nice and smooth.
  4. Add sugar and stir with a wire whisk until combined.
  5. Whisk in eggs one at a time and vanilla until combined.
  6. Stir in flour mixture until blended and then stir in chocolate chips.
  7. Spread chocolate batter in prepared pan.
For the butterscotch batter...
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup butterscotch chips
  1. Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
  2. In the bowl of your standing mixer, beat butter, sugar, and vanilla together until creamy.
  3. Add eggs one at a time and beat until blended.
  4. Gradually beat in the flour mixture and then stir in butterscotch chips.
  5. Drop spoonfuls of butterscotch batter on top of the chocolate batter in the pan and use a knife to gently swirl the two together. Don't mix too much.
  6. Bake for 35-40 minutes. If the top starts to get too dark, place a sheet of aluminum foil over the pan for the last 10 minutes.
For the ganache topping...
  • 12 oz. semi-sweet chocolate chips
  • 3/4 cup heavy cream
  • 6 Tbsp butter
  • extra butterscotch chips to decorate
  1. Wait until the brownies have cooled before starting to make the ganache.
  2. In a small saucepan, heat butter and cream.
  3. Remove from heat right before it starts to boil and pour over chocolate chips.
  4. Let stand for about 20 seconds and then stir until completely blended and smooth.
  5. Spread ganache on top of the cooled brownies. Let set for a few minutes before sprinkling butterscotch chips on top.
  6. Devour!!!
  7. Store in an airtight container at room temperature but eat within 48 hours.
