Oatmeal Lemon Creme Bars

Hi everyone - hope you all had a fabulous weekend! I was really craving lemon yesterday for some reason, so I decided to make oatmeal lemon creme bars. They are pretty healthy for a baked treat and definitely satisfied my lemon craving. :) They were super easy and delicious and the best part is you can eat them for breakfast!


Oatmeal Lemon Creme Bars
combined recipes from Just Call Me Maria and The Pioneer Woman
makes about 16 bars

Ingredients:
  • 1 stick butter, room temperature
  • 1 cup brown sugar, lightly packed
  • 1 egg
  • 1 1/3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup oats
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • zest from 1 lemon
  • juice from 2 lemons
Directions:
  1. Preheat oven to 350 degrees. Spray the bottom and sides of an 8-inch square pan with non stick spray and set aside.
  2. In the bowl of your standing mixer, beat the butter and brown sugar until they are well combined.
  3. Beat in the egg until combined.
  4. In a separate bowl, sift together flour, salt, and baking powder.
  5. Slowly add dry mixture to the butter/sugar mixture in your mixer until it's well combined.
  6. Reduce speed to "stir" and add in the oats.
  7. Press half of the oat mixture into the pan. (It's important to only use half or else you won't have enough left over to cover the tops of the bars!)
  8. In a small bowl, whisk together sweetened condensed milk, lemon juice, and lemon zest until nice and thick.
  9. Spread lemon mixture evenly over the layer of oats in the pan.
  10. Top with the remaining oat mixture, but do not press it down too hard.
  11. Bake for 20 to 25 minutes or until the top is golden brown. Let cool and refrigerate for 30 minutes or until set. Cut into 16 bars and enjoy!!!
  12. Keep leftover bars in the fridge until ready to eat.
